Whole Bean Coffee

Q. Why is it better to buy whole beans than ground coffee?

A. High-quality coffee is most often sold in a whole bean format because coffee is the best ground immediately before brewing. Coffee begins going stale every moment it is exposed to oxygen. Coffee in its whole bean form has a degree of self-protection, but once ground it goes stale quicker. 


Q. How long will my coffee stay fresh?

A. Our coffee is packed soon after roasting in oxygen-free bags and will stay fresh for months if unopened. Once opened the beans will stay fresh for 3 to 4 weeks if properly stored in our resealable bags


Once ground coffee begins to stale every minute it is exposed to oxygen


Q. How many cups will I get from my 340g/12 oz. bag of coffee?

A. That depends on how strong you prefer your coffee and how big your coffee cup is!


Q. How should I store my coffee?

A. Store in our resealable bag and squeeze the air out using the one-way valve in the bag.


Do not freeze or refrigerate. Store in a cool, dark, and dry place away from sources of heat, moisture, or direct sunlight.


We encourage our customers to purchase only enough coffee to last a few weeks rather than stocking up.


Q. Does coffee expire?

A. Coffee beans have a very long shelf life when properly packaged and stored but do lose their flavour and aroma after a period. Best to brew it while it’s fresh!


Q. Do you offer flavoured coffee?

A. No, we don’t believe in masking the unique taste profile of a quality coffee. That would be akin to mixing a single malt scotch with a soft drink - blasphemy! Artificially flavoured coffee beans will leave a residue in your grinder which will impact the flavour when doing subsequent grinds. If you want to use coffee as a basis for flavoured specialty beverages add syrup or flavouring after brewing

Q. Why do some coffees cost more than others?

A. Like wine, coffee quality varies widely based on the varietal of the plant, country of origin, soil, climatic conditions, husbandry performed by the farmer, processing and roasting. We only sell quality Arabica beans, superior to the low-cost, low-quality Robusta beans used in many consumer brand coffees. 


Q. Do more expensive coffee beans make better coffee?

A. Expensive doesn’t always equate with quality. Marketing and profit margins of the big brand names add cost, as do Fair Trade and Organic certifications. Seek out a reputable roaster who provides quality coffee at fair pricing.


Quality coffee will not provide its potential flavour if not brewed properly using quality equipment and the correct water temperature. 


Q. I don’t know what roast I like (dark roast vs light roast), how should I choose?

A. This is a personal preference. Be open-minded and judge each coffee on its own merit. Lighter roasting allows the natural flavours of the coffee to be present in the cup. Very dark roasting masks the subtle taste profiles of a coffee. Think of lightly toasted bread versus the burnt taste of over toasted bread.


Don’t confuse the taste of a dark roast with the strength of your brew - stronger coffee is achieved by using more coffee. 


Like a fine wine, you may prefer a different roast for different occasions or times of the day.

Q. How much caffeine is in coffee?

A. Caffeine levels vary slightly depending on the bean, roast level and brewing technique. The significant factors are the number of grounds you use to brew your coffee and the size of your cup! An 8oz cup of filtered coffee contains 96mg of caffeine, a 1 oz espresso 64 mg. 


Caffeine is a natural stimulant found in many foods and drinks, including coffee and tea. It’s associated with many health benefits unless consumed in excess.The recommended daily intake of caffeine is 400mg, about 4 cups. If you want to reduce your caffeine consumption try decaf coffee or a half-caf (blend decaf and non-decaf grounds).


Q. Why is coffee acidic?

A. Coffee contains many organic acids including citric, malic, quinic, acetic, succinic, and tartaric acids. These are the “good,” fruity acids that you want to taste in the cup. Acidity is a prized attribute that may be described as a fruity or bright taste. Coffee low in acidity will taste “flat”. Dark roasting reduces acidity, so high acidity coffees lend themselves better to dark roasting.


Coffee also contains some chlorogenic acids, which get broken down in the roasting process into quinic and caffeic acids. It is these compounds that cause bitterness, astringency and sourness, so often the darker the roast, the more bitter it is, while the lighter the roast, the more acidic it will be. 


Loose Leaf Tea

Q. What is loose leaf tea?

A. It is the leaves of the Camellia sinensis plant. It is generally larger pieces of the leaf than those found in a teabag. 


Q. Why is it better to buy loose leaf tea than tea bags?

A. Teabags contain lower quality tea cut to fine particles for quick steeping and are blended for commercial standardization. Loose leaf tea is of higher quality, fresher and available in diverse varieties from different countries and growing regions. It is generally larger pieces of tea leaves and should be steeped in the manner appropriate for the variety.


Q. What are the health benefits of loose leaf tea?

A. Tea has antioxidant and anti-inflammatory properties which can contribute to your overall wellness. The primary compound responsible for the health claims called catechins, are found in the highest concentrations in fresh leaves. The benefits of tea are only apparent when it is correctly harvested, produced and brewed when fresh. 


Q. How should I store my tea leaves?

A. Like Coffee, tea should be stored in an airtight container in a dark, cool, dry place free from strong odours. 


Q. How long will it last after I open the package?

A. Two years if stored properly, but tea is at its best when brewed as fresh as possible.  


Q. How much caffeine does tea contain? 

A. The tea itself contains 2 to 3 times more caffeine than coffee, However, the coffee brewing process uses more coffee volume and hotter water, extracting more caffeine. Therefore, brewed tea contains about half the caffeine of brewed tea. An 8oz cup of tea contains 15 to 50mg of caffeine, depending on the tea, quantity used, water brewing temperature and steep time.  


Q. Can I use tea more than once?

A. Yes, but you must remove the leaves from your tea and set them aside until ready to re-steep. Resteep as many times as you wish so long as you enjoy the results. 


Q. What is the difference between traditional tea and herbal tea?

A. Herbal teas are made from dried fruits, flowers, spices or herbs such as Chamomile, Peppermint, Ginger and Rooibos and generally contain no caffeine. Despite their name, herbal teas are not true teas at all. True teas, including green tea, black tea and oolong tea, are brewed using the leaves of the Camellia sinensis plant.
